Podvelebit shrimp tartare, wine jelly, chestnut mousse, orange marinated in bermet, frozen beurre blanc with Dalmatian herbs

BUZARA

Mussel carpaccio, basil emulsion, poached oyster with apple, salicornia, buzara foam

GRINKEK

Celery terrine with parsley pesto, celery root dashi, parsley oil, crispy parsley, celery root panna cotta, kale emulsion

Smoked duck breast marinated in apple, crispy breadcrumbs, beetroot variations, pickled carrots stuffed with duck liver
